mom2bee
I have a head of fresh broccoli that I bought a week ago and forgot about I found it just now in the bottom of the fridge, beneath a bag of carrots and its 98% yellowed, but still firm. Can I still eat it? It doesn't smell or feel soggy or spoiled--its just turned yellow from....whatever it is that turns the broccoli yellow. SparklyUnicorn
Yeah, but it will be bitter.
J-rap
I think I've heard that it's safe to eat, but won't taste as good and also will have lost some of its nutritious value.
flyingiguana
sometimes you can kind of carve off the top yellowed bits It's not primo gourmet food, but it is edible (least, we didn't get sick).

Laurie4b
My guess is that other than fiber, most of the nutrients are gone because it's so old. Broccoli normally would not yellow in a week, so it was probably middle- aged when you bought it. :) I would toss it in the compost.

rose
We would eat it. All the mineral will still be there. Elements can't breakdown or vanish. Basic chemistry still applies.
