Excelsior! Academy Posted March 9, 2013 Share Posted March 9, 2013 Breakfast burritos. You can make any breakfast casserole in muffin tins. Just reduce the baking time a bit. When cooled pop them out and wrap individually. Eta: homemade McMuffins, fruit or smoothies in individual portions. Once a month mom has a lot of great breakfast recipes. Baked oatmeal (lots of yummy recipes online), cut in squares and frozen, lots of healthy muffin recipes, too. These quinoa spinach bars freeze well, too. We eat dairy, but my husband can't have any first thing in the morning as the calcium interferes with his thyroid medication. There's also too much calcium in the almond milk he likes. Onion, bacon or sausage, egg and hash brown casserole-no cheese. Egg and sausage or bacon on biscuits, bagels, or english muffins. Potato and egg, bacon and egg,or sausage and egg breakfast burritos. I actually double the recipe and use a 16 oz bag of frozen spinach instead of two 10oz boxes. I also substitute whatever shredded cheese I have on hand.
