Almond flour and almond milk recipes

So I have some almond milk that I got because I thought it might be good in my coffee. It's not. It's terrible, and I can't stand it. So what recipes are good with almond milk? (It's the plain, unsweetened kind.)

 

I also have some almond flour, and I'm interested in grain-free baking with it. Anyone have any favorite recipes (like for pumpkin or zucchini bread/muffins)?

Almond milk is good in smoothies. Toss in some frozen berries, yogurt, sweetener of choice, vanilla, and blend. Sometimes we use almond milk with a stevia-sweetened protein powder like Jay Robb.

 

The unsweetened chocolate isn't bad with a pinch of sea salt and a little stevia for hot chocolate.

 

Almond flour is great. I like Honeyville Grain much better than Bob's Red Mill.

 

This site has some great recipes. The boston cream pie is incredibly good, although I use a different ganache or glaze recipe. Most of her recipes are really good. http://alldayidreamaboutfood.com/ IMO, if she says it is good, it is really good!

 

I just made the cinn. rolls from Maria's site. It sounds like people were having trouble using Bob's Red Mill. I used Honeyville and my dough wasn't quite thick enough, so I ended up with biscuit shapes vs. nice rolls. I will adjust next time now that I have a better idea, but they were still really yummy. http://mariahealth.blogspot.com/ She has other almond flour recipes.

This is soooo good, although I tend to make it more often in the summer. I use erythritol and stevia vs. Splenda.

:iagree: totally. Almond milk in coffee is awful!!! But, I do like almond milk in baking. I use it in pancakes, waffles, and other baked goods. Like others have said, it is good in smoothies.

 

Oat Milk is really good in baked goods too because it is a bit sweeter and maybe just a tad thicker.

 

Almond flour is a good addition to regular flour in baking. I'm not sure how to use it by itself for gf baking. I do use it in various bread and cake recipes and it makes a nice texture.
