domestic_engineer
We grilled some zucchini tonight and have quite a bit left over. Do you have any suggestions on how to use the leftovers? I'm afraid of turning it to mush by cooking it again. Help please!
sweetbasil
Mix it into pasta sauce or add it to cornbread batter.
Joyful
You can make a nice veggie sandwich/wrap. It goes well with hummus. =) Even better if you also have grilled eggplants, grilled peppers, and sun dried tomatoes. Also, they go nicely over pasta. The heat of the pasta kind of warms the zucchinis. They are also nice over a cold pasta dish.
Hunter's Moon
Throw it into some pasta salad. Zucchini tastes so yummy with Feta!
Annie G
It's really good mixed in with pasta- especially if you have any pesto to add to it. Or a bit of cooked chicken. Warm it, then toss it in. Yum.
Slartibartfast
Zucchini is good in nearly everything, it just absorbs the flavor of whatever it is in. Since it has already been cooked once I would make zucchini bread with it or add it to some sort of batter, zucchini cakes or something where mushy wouldn't matter
Lady Marmalade
I would add it to eggs- an omelet, frittata or simple scramble. Add a few pieces to some quesadillas. Or use it to top some homemade pizza.

Dandelion
One of our favorite recipes is curried vegetables with pasta - zucchini is great for that.
songbirdie
Zucchini parmigiana: Lay grilled zucchini in one layer in baking pan. Cover with marinara sauce and a thick layer of freshly grated parmesan cheese. Bake until warm. Yum!
kalanamak
Chilled with lemon juice and olive oil as a side dish. Or, you can use balsamic. You could also sprinkle with grated parm or romano or a cheese like that and quickly broil them. You could also quickly warm them with tomato slices in the broiler and slap onto toast with slices of fresh mozz cheese. Yum.
domestic_engineer
Yum!!! All the ideas sound great ... it almost makes me wish I had more leftover zucchini! I'm sure though, that I'll have plenty of opportunity to try all the ideas as the summer progresses! Thanks soooo much!
J-rap
Cut it into smaller pieces, and heat it one more time in some hot olive oil on the stovetop, along with grated sharp cheddar cheese, salt and pepper. Serve it as a side dish.
