ktgrok Posted June 17, 2011 Share Posted June 17, 2011 I have some stuff I want to use, but i don't know how. 1 eggplant 1 green pepper 1 orange pepper zucchini sweet onions fresh herbs grass fed ground beef or boneless chicken thighs I need it to be something where i can eat low carb. i don't mind serving it with/over pasta if I have too for my family, but I will not be eating any pasta/rice/etc. I don't have to use the green pepper right now, but I definitely need to use the eggplant before it goes bad. You can then enter the ingredients you have and the ones you don't want. It will give you a variety of choices. With your list I would do something like fajitas but use lettuce instead of a tortilla. www.food.com also has some great recipes but it is not as easy to search. elfgivas Posted June 17, 2011 Share Posted June 17, 2011 if the zucchini is a fair size, i would cut it in half lengthwise, and scoop out the seeds. i would chop the peppers, onions, herbs, cook them with a bit of the ground beef, and stuff the zucchini with it. i also like to add tomatoes to it, and top it with a bit of cheese, and bake it in the oven for 30 minutes or so... i'd make baba ghanoush with the eggplant http://www.food.com/recipe/baba-ghanoush-the-best-in-the-world-67570....
