The guest is a bachelor Navy guy that will be arriving while I'm herding all the kids upstairs for bed preps so the men can talk "big Navy thoughts" :tongue_smilie:. Kathleen in VA Posted January 7, 2010 Share Posted January 7, 2010 I love to serve Apple Cinnamon Cake. It is very easy, but the topping is out of this world and the cake is super moist. It goes well with coffee, too. Apple Cinnamon Cake Beat 3 eggs in a large bowl. Add one can of apple pie filling and mix thoroughly. Add one box of Yellow Cake mix, stirring until moistened. Spread into 9 x 13 baking dish. Topping: 1 cup brown sugar 1 tablespoon flour 1 teaspoon cinnamon 1 tablespoon butter 1 cup chopped nuts (pecans or walnuts work well) Mix first three ingredients together well. Blend in butter with a pastry blender. Add nuts and mix well. Sprinkle topping over cake batter and bake for 35-40 minutes at 350 degrees. Mrs Mungo Posted January 7, 2010 Share Posted January 7, 2010 My go-to dessert for pot-lucks: Cookies and Cream Cake Cake: 12 oreos, coarsely chopped 1 package white cake mix 3/4 c water 1/2 c sour cream 3 egg whites 2 T vegetable oil Icing: 1 1/2 c powdered sugar 1/4 c sour cream 3 T butter, softened Preheat over to 325 degrees. Oil and flour a bundt pan. Combine cake mix, sour cream, water, egg whites and oil and mix according to package directions. Pour half the butter into the pan, sprinkle the 12 chopped cookies over the batter, without letting them touch the sides of the pan. Spoon the rest of the batter on top. Make about 50 min or until done. Allow to cool and remove from bundt pan, as usual. For icing: beat the powdered sugar, butter and sour cream until smooth. Glaze the cake with the icing. We have brownies, ice cream (usually vanilla and maybe coffee or something like that), with chocolate and caramel syrup and whipped cream. Adults and kids usually all love this option. First combine 1 box yellow cake mix (I only use Duncan Hines), 1 stick of butter, melted, and 1 egg. Press into 9x13 pan. Next beat 8 oz cream cheese (softened), 2 eggs, 16 oz powdered sugar & 1 tsp vanilla. Pour over cake mixture. Bake 350 for 35-40 minutes I think this tastes better the next day! CatMomof3 Posted January 7, 2010 Share Posted January 7, 2010 Blackberry Cobbler (but I add different fruit) Fruit: 1/2 cup sugar (you may add a little more) 2 T flour (if using frozen berries add 2T more) 3 cup of fresh or frozen berries (I do 1 1/2 cup of sliced strawberries, 3/4 cup of raspberries, and 3/4 cup of blackberries) 2 T butter Topping: 1 cup flour 2 T sugar 1 1/2 t baking powder 1/2 t salt 1/3 c upshortening (I use butter) 3 T milk 1 egg Preheat oven 350 degrees In a small bowl, mix the sugar and flour. Fill a 8 or 9" baking dish and fill with the fruit. Sprinkle the sugar flour mixture on top of the fuit. Dot with butter. Set aside. In another bowl, sift the flour, baking power, and salt. Add sugar, then shortening (butter), milk, and slightly beaten egg. Sit with a fork until blended. Drop by spoonful on to the fruit. Bake for 25-30 min (min always takes closer to 45 min), You can serve this warm or room temp. OnTheBrink Posted January 7, 2010 Share Posted January 7, 2010 I like to make a bundt cake, then when I serve it, I put a swirl of caramel or chocolate sauce on the plate before placing the slice of cake.
