I don't want to grind them up (I have several bags of ground almonds for one thing). What else could I do with them? I'd hate to throw them out, but I really can't eat them the way they are. Pam in CT Posted June 1, 2017 Share Posted June 1, 2017 Smash them a bit, sauté them on low heat in a bit of olive oil (that will soften them), and toss them into salad / vegetables / stir fries / curries. I know they can so maybe I've been lucky, but freezing has always worked well for me. DH's grandparents used to have pecan trees and would send us pounds of pecans every other year; I'd freeze them to try to make them last as long as possible. If so, you could crack them with a nutcracker, or pound them with a rolling pin until they are roughly quartered, and use them in stir fries and salads.
