hornblower Posted April 28, 2016 Share Posted April 28, 2016 Greek salad with lentils. Just chop, mix, add a can of drained lentils. I'd add onion. Vinaigrette. Feta if you eat cheese. cjzimmer1 Posted April 28, 2016 Share Posted April 28, 2016 I'd add onions, black or kalamata olives, chickpeas, lemon juice, olive oil, salt and pepper, and fresh parsley or oregano if you have it (I'll use dry and let it sit for while if that's all I have on hand). Stacia Posted April 29, 2016 Share Posted April 29, 2016 I would slice the cucumber into rounds, then top each slice w/ a mix of the diced pepper & tomatoes.
