Night Elf Posted April 8, 2014 Share Posted April 8, 2014 I had to buy food to fit into one grocery bag for a food donation. I over-purchased. If I leave out the self-rising corn meal, it all just fits and the bag is heavy. So if I keep the corn meal, what can I do with it? The next pickup is in 2 months. And I'd love to try those hoe cakes. This was one of the items on the suggested food list. It's not something I'd ever purchase for myself. marbel Posted April 8, 2014 Share Posted April 8, 2014 Cornbread is one of the first things my kids learned to bake on their own. It's easy and perfect with chili, beans and rice, lots of things. I think I've seen some recipes for fried okra that call for self-rising, too, but I'm not sure. If you end up keeping it and using it for yourself, but find you don't use it often, you can store it in the freezer in a ziplock. Well, I store regular but I assume self-rising would store well there too. kbutton Posted April 8, 2014 Share Posted April 8, 2014 Corn fritters with raisins (and I'm not a big raisin fan). Delicious. Batter fish with it--you pat the fish dry, dredge it in the cornmeal (add a little salt and pepper if needed), dip it into scrambled egg/milk (or egg/water), and then into the cornmeal again.
