AlmiraGulch Posted November 5, 2011 Share Posted November 5, 2011 will somebody please tell me what to make for dinner tonight? (I know, I know...another dinner thread. I'm desperate). I was supposed to make lasagna, but the thought of it makes me weary. I need something cheap, easy and quick, but I don't want hot dogs or the like, know what I mean? I have no food in the house so whatever you suggest I'll have to go buy it. Other things I don't want or I'm sick of: Spaghetti hamburgers tacos chicken soup of any kind (we've already had chicken and dumplings and chicken soup this week) Ok, let me have it. Take 1 1/2 cup cooked rice, 1 can of condensed mushroom soup, 1/2 cup milk, and 1 can of drained tuna. Mix it all together. Serve veggies on the side. Aubrey Posted November 5, 2011 Share Posted November 5, 2011 Ok, I just checked your local Kroger ad. Split chicken breasts are on sale for 99c/lb. 1. Barbecue chicken sandwiches. Chicken & bbq sauce in crockpot (hurry!) Roll of biscuits (for the sandwich part) Couple of bags of frozen veggies (on sale for $1/ea) Maybe mash some potatoes If you get inspired, make a fruit salad to go with it. I know, the whole thing's not super autumny, but it's easy & good. At my house, it would feel like a holiday, because I don't cook this well most of the time. ;) 2. Broccoli rice casserole, if it's not too much like chicken soup. 1 stick of butter, water, rice, broccoli, chicken. Cook for an hour if the chicken's thawed, 2 (I think) if it's not. Your fresh produce prices are kind-of high. Is it just Kroger, or is it the time of year/your area? I was going to suggest something else, but I couldn't find the flier I wanted online. chepyl Posted November 5, 2011 Share Posted November 5, 2011 Beef Stroganoff - Easy Version Buy a Tyson Precooked roast (1-2 lbs) (the kind you microwave and eat), you can find them in the meat section. Cut into small chunks. Chop an onion and saute for a few minutes (until soft) add the meat, 1 pt pre-chopped mushrooms and 2-4 cans of beef broth (2 for 1 pound, 4 for 2 pounds). Let it simmer for 20-30 minutes until the mushrooms are cooked. Stir in 4 ounces of sour cream per can of broth. Bring to a boil. Mix 1 tbsp of cornstarch per can of broth with equal parts cold water, stir into the boiling broth to thicken. Here's my basic recipe; 1# ground beef 1 can green beans 1 can cream of mushroom soup 1 soup can milk 1 small package of tater tots Brown the ground beef and put with green beans in a 2qt casserole dish. Mix soup and milk together. Put tater tots over top of bean & beef. Pour soup/milk over the top. Bake uncovered for 1 hour at 350 degrees. I use whatever cream soup I have on hand or feel like. If I don't have a cream soup on hand I make a white sauce using chicken boullion. I use whatever vegetables I have on hand, canned, frozen or fresh. Sometimes I top with cheese. Sometimes I add taco seasoning the beef and make spicy corn the vegetable. This also freezes very well. After I serve dinner I put the leftovers into single serving size plastic containers and freeze (you could use ziploc bags or glass as well). I hope you enjoy. This is my favorite for potlucks: 1 lb spicy Italian sausage 1 jar spaghetti sauce I tub ricotta cheese Shredded mozzarella (1-1/2 lbs) 1 lb ziti or whatever noodle you like Optional:peppers and/or onions if you like em. Bake or brown sausage and cook noodles just shy of al dente Mix everything and pour in a greased pan, cover with foil, and bake until the cheese is bubbly.
