Food4Thought Posted July 22, 2011 Share Posted July 22, 2011 Melt 1/2 stick of butter in a skillet. Add 2 or 3 cloves of minced garlic. Add a handful of cashews. Saute until the cashews begin to brown. Then add your sliced squash and saute until it is slightly softened. Salt & Pepper to taste. Yum! jenn- Posted July 23, 2011 Share Posted July 23, 2011 I slice them into rounds, rub both sides with olive oil, sprinkle with salt, pepper and Italian seasoning. Stick in a preheated oven (I use our toaster oven) at 450 for about 8 minutes, take out and sprinkle with Parmesan cheese then cook for about 3 more minutes. LibraryLover Posted July 23, 2011 Share Posted July 23, 2011 (edited) When you are not sure, my answer is to flash freeze and /or can. Flash freezing is simple. Steam slices briefly, plunge in ice water, drain, lay on a cookie sheet and freeze. Bag it all up in the portions you desire. This works well in stir fry! I also like to puree. Steam gently (or not at all) whirl in blender, freeze. SonshineLearner Posted July 23, 2011 Share Posted July 23, 2011 Squash sauteed in butter with onions that oops... do the onions first so they are almost carmelized is my favorite... extra butter ... served in tortillas with a yogurt cheddar cheese sauce if you like that. I prefer without. Of course salt and pepper... Favorite!!! Squash casserole with... squash.. onions... and other "Stuff"... topped with... saltine crackers mixed with... you got it... butter!! You want the cracker mix to barely brown!! Incredible!! Yum!! :) We're gonna get some squash soon, in our CSA shares.... yum... can't wait!!
