I also saw a recipe for a fabulous-looking apple cake that called for fresh or frozen cranberries (I only have dried, which is why I'm still craving it!). The recipe I have is gluten free, so I won't bother linking it, but if you're interested, you can Google for recipes--my quick search turned up a bunch, all with varying degrees of complexity. Amy in NH Posted May 30, 2011 Share Posted May 30, 2011 BISHOPS BREAD 1 1/2 C flour 1 1/2 tsp baking powder 1/4 tsp salt 2/3 C chocolate chips 1 1/2 C chopped nuts 1 C coarsely chopped cranberries 1 C halved or coarsely chopped maraschino cherries 3 eggs 1 C sugar Grease a 10x5x3 in loaf pan and line bottom with waxed paper. Mix flour, baking powder, salt. Stir in choc bits, nuts, cranberries and cherries until coated with flour. In another bowl beat eggs and add sugar - fold in flour mixture. Pour into loaf pan. Bake at 325 1 1/4 hrs or until toothpick comes out clean. (Mini-muffins 12-15 minutes, Mini-loaves 30-45 minutes) Cool in pan on wire rack.
