Lemon Pea Spaghetti Salad 1 lb spaghetti noodles, broken in half (you can use other types of pasta) 1 lb bag frozen peas ½ - 1 red or yellow or orange pepper, diced (use as much or little as you like) ¼ to ½ onion, diced or cut in thin sliver half moons (red is especially good) 2 C mixed salad greens, chopped (Spring mix, herbed salad mix, baby spinach, whatever you’ve got) 1 C (or so) grape tomatoes, halved 1 T garlic, minced Zest and juice of 1 or 2 lemons Pecorino cheese, grated Olive oil Salt, pepper 2-3 boiled eggs, peeled and chopped or sliced Edited May 13, 2009 by muffinmom the recipe didn't come through the first time! 2nd time, directions didn't go through??? kah Posted May 14, 2009 Share Posted May 14, 2009 Mine's not fancy, but it's easy and everybody always seems to like it. 1/2 - 1 box tri-color rotini, cooked and cooled 1 or 2 small cans of sliced olives pint or so of grape tomatoes, cut in half green pepper, finely diced diced sweet onion, to taste (not much for me, but it needs a little) 1/2 - 1 bottle of Kraft Italian dressing Mix it all up ahead of time so it has a chance to marinate a little. kjdkek Posted May 14, 2009 Share Posted May 14, 2009 Best pasta salad ever!!! 1 pkg wacky colored noodles 1 can crushed olives 1 red onion chopped small 1 bellpepper chopped small 1lb colby cheese cubed small salame cut into small pieces (adjust according to taste) We use half of a large pkg but I always double the recipe 1 bottle Berenstein's Italian Cheese dressing Mix all and chill. You can make it the day before and let the flavors meld over night. 2 - 3 chicken breasts Berstein's Restaurant Recipe Italian Dressing (best every day price at Walmart) ~2 cups brocoli, chopped ~2 cups carrots, chopped 1/4 thick pieces 1 -2 cups cherry tomatoes (don't chop them up) 16 oz. package of spiral noodles Coat the chicken breast in dressing. Broil for about 10 minutes (or until done), flipping halfway through. When the chicken is done, cut it into bite size pieces. While the chicken is broiling, prepare noodles according to the package, drain when done, and rinse in cold water. Mix vegetables, noodles, and chicken in a large bowl and coat thoroughly with dressing. Refrigerate. Serve cold. Crab Meat Salad 2 lbs imitation crab meat, cut up 12 – 16 oz medium shell pasta, cooked 2 cups Miracle Whip 2 cups sour cream ¼ cup sugar Mix together Miracle Whip, sour cream and sugar in a large bowl Add crab meat and pasta. New Potato Pasta Salad Lisa Harmon 4 cups new potatoes, diced 12 oz. rainbow rotini 1 lb bacon, chopped, cooked and drained 8 hard boiled eggs, peeled and chopped 1 cup mayonnaise 1 cup ranch salad dressing Boil large pot of water. Drop in potatoes ( you don’t have to peel them) and cook for 3 minutes. Add rotini and cook 10 to 12 minutes more until rotini and potatoes and done. Drain. You want about equal amounts of cooked rotini and potato. In a very large bowl, wisk together mayonnaise and ranch dressing. Add potatoes, rotini, bacon and eggs. Stir and chill. I don't go by a recipe, but it includes Bowtie Pasta Feta Cheese (this is where most of the flavor comes from) Mozzarella Cheese Chopped Spinach (frozen - defrosted with all water squeezed out) Black Olives Onions (red best) Cucumbers Tomatoes but I only used them when they are fresh from the garden. Dressing - Olive Oil, Vinegar, Salt (not much), Pepper Also if found that most Pasta salad recipes can be adapted to Rice Salad by just subsituting the pasta for rice. OnTheBrink Posted May 14, 2009 Share Posted May 14, 2009 Here's how I make mine, and it always gets compliments. 1 lb tri-color pasta (bow ties, or rotini, etc) grape tomatoes red onion black olives bell pepper (the more colors, the better!) zucchini or cucumber, diced shredded mozerella (I can't spell that) and, either: canned chicken breast and chopped broccoli OR diced pepperoni 1 bottle of Italian dressing Boil the pasta per box instructions, rinse and let cool (or let the cold water run over it a few minutes and cool it that way).
