  1. I thought the whole point of oxtail was the fat that's melted into the dish making it a super rich roast Lot of it did, but there was still some big chunks of fat clinging on and completely unappetizing to me. It was soft and tender but 😬
  2. Yes! I know they can avoid doing it because I’ve never heard them do it away from home…so why do it at all?!? 🤦‍♀️
  3. Maybe I should have trimmed the fat off, a lot did dissolve but even though the meat was super tender, there was big shaggy pieces of fat
  4. Do you eat around the fat and bones, or do you pull it?
  5. Last year for the first time I was allowed to choose my own beef order. One of the things I got was ox tail. Yesterday I finally made it in the crockpot following an online recipe. Then I pulled it off the bone and served it with the jus with rice. It was good, but not life changing like all the sites on the internet made it out to be. Just seemed like roast. I wasn’t sure if I was supposed to just slap down the whole joint on the plate or not, so pulled the meat. I have another package to fix at one point, so I’m looking for suggestions
  6. I’ve heard that people who pick up accents are hard wired to be good at learning other languages, I wonder if that’s true. I spent my young years in Michigan with a native and a parent with a slight southern accent. When I am nervous, around others with the same accent or when I’m giving a tour, my accent shines. But at the same time, because I spent high school and college living in different areas, I also have some Kentucky ways of pronouncing things. Dh thinks this is really funny sometimes. Not too long ago we were watching a home movie that ds24 filmed when he was about 8 and the kids were remarking how much more pronounced my accent was back then.
  7. My dh, his dad, his brother and now ds24 are what someone on here called yell sneezers. I swear he did not sneeze like that when we were dating or first married. It seemed to develop over time. Same with ds24. He didn’t sneeze like that when he was young. I only noticed him doing it after he moved out. They make this weird aaaahhhhh yell and then let loose with a giant loud sneeze from the mouth. I swear if they closed their mouths and sneezed through their nose their heads would pop straight off 😆

  9. Mil got it in the hospital and came home with it. Fil was not good at decontamination and she suffered with it for a while, so we just assume we are all carrying it now

  11. When do we start it? It’s too late for me to get it tonight but I can go back into town tomorrow. Is the florastor in addition to yogurt? Or is it better to start when you finish the antibiotics?
  12. Dh starts a course of two different antibiotics. The Dr said they would probably make him sick to his stomach. After we left the urgent care I remembered we have all been exposed to c-diff, but it was like 6 months ago I think. Do I need to be doing anything g special? Is now the ti e to take the probiotics? I’m too tired to think so please dumb it down for me. Thanks

I work at an Underground Railroad house and in our filing cabinets we have tons of information that isn’t made public online, but people can come in and ask about their families and we do our best to chase them down. The small town the house is in also has a tiny town museum and they have what must be 100 bankers boxes of paper all about the towns history and families, non online of course. The librarian in the same town is an amateur historian and she has boxes of old family records and stuff, including stacks of property transfer ledgers. I wonder if you could contact someone in the town you are interested in and find someone willing to help? One of my assigned summer projects is to start scanning to a usb all of the paper work we have. In these three places the little town is sitting on a gold mine of information that you can only access through a group of retired ladies ETA: if you are interested I mean. I was shocked at all the primary sources we have available if you know who to ask. It is very hyper local though

  16. I myself need to remember this, good point! The other day I made burgers, box Mac and cheese and canned pineapple for lunch and found myself apologizing. Dd20 was like why? There’s meat, carb and a fruit. Isn’t that what we’re supposed to eat? And I had to remember most meals don’t need to be a Pinterest creation. We have two Amish auctions that people buy from and resell roadside. None of them take ebt. Several years ago now someone tried to get one of those kind of markets going but it only lasted two seasons. That was before the Amish produce auctions sprang up. I think if they could have had enough produce consistently at a lower price, it might have gone better here. I’ve seen some beautiful markets like that while traveling though.

  18. Absolutely. Which is why I asked about the three options upthread. These were her suggestions. She talks about wanting to do better “so her kids dont grow up to be fat”. she has more options than she realizes, it’s the stepping out and trying that is intimidating.
  19. She does have ebt and a regular fridge. Her oldest is second grade. I think the mental hurdle is the biggest part. It still takes energy to oversee helpers, and at least for me, If I’m tired, I would rather not have any help. But thinking ahead, the helping can actually be a nice moment together. It’s the mental block of “we dont usually eat that” “I’m tired “ “ I can’t afford that”

Me too, today is the day I get home right before dinner, drop kids off at lessons, fly to dh’s work to pick him up, fly back to lessons to pick them back up and then get home at 6:30 to everyone starving. Tonight we are having marked down fried chicken from Kroger, box Mac and cheese and salad from a box of marked down greens also from Kroger. It all just depends on time. Last night we had a roast we raised ourselves cooked all day in the crockpot and then the juices used to make a ragu that I served with pasta and green beans we grew and canned ourselves. So I, for my family, do t sweat the convenience meals now and then. Just thinking through how you go from always those foods to sometimes those foods
  21. Good question, I don’t know. I know the Kroger in the next county will let you order online and then meet you at a church on the county line, but do t really know how that works. There is a Walmart, she I don’t think she goes there much because of gas and time. There is a save a lot in the town the kids go to school in, so much easier to pop into
