We have a ton of other junk here and I’m afraid it will go bad before we can get to it. I’d like to freeze it and save it for Christmas Day. Has anyone tried this? Will the crust get soggy? Anything with any kind of custard -- pumpkin, key lime, boston, banana cream, etc cannot freeze. signed, Pam in CT who has long relied on baking mother, baking cousin and baking aunt for the pie effort and who has been largely bereft for most of COVID, sigh. Place the pie uncovered in the freezer until it is frozen (overnight). Once frozen, wrap the pie tightly with plastic wrap or aluminum foil then place in a plastic freezer bag and place back in the freezer. Frozen, baked fruit pies will keep up to 4 months. How do you re-heat baked frozen pie? Unwrap and thaw at room temperature for 1 hour or in the refrigerator overnight. Place the pie in a baking sheet (recommended to handle overflow) and put it in a pre-heated oven. Heat pie at 300°F on the lowest oven rack for 15 to 20 minutes or until warm. Katy Posted December 16, 2020 Share Posted December 16, 2020 I worked at a restaurant in college who froze all pies, thawed at room temperature, and heated slices individually for 30 seconds in the microwave.
