pick a graduation date

I always chose the graduation date to be about two weeks past the end date of their last outside class.  That way, if we got behind a little bit in our "home-brewed" classes due to the end of year craziness of online final exams and days eaten up with AP exams, the kids had two weeks at the end to devote to wrapping up the stuff they did with me.

 Like Alewife, I picked a date about two weeks after I thought we'd actually finish to avoid any issues with classes finishing late or testing or .... anything else that could possibly come up.  I felt like too early a grad date was more likely to cause problems than a later graduation date.

Agreeing with other responses! I picked a date 2 weeks past my "on paper" ending date. DD had an official graduation date set, so I put two weeks after that on her paperwork. That gave us plenty of time for last minute paperwork gathering, finalizing the transcript, etc & I didn't feel pressure to get that all done while actually finishing the school year and/or preparing for the graduation ceremony. ?

I would choose a date that is in line with public schools in the area.  Some states have graduation dates much earlier than other states; locally, graduation dates are mid-May.  If a student wants to take summer classes at a university or apply for a job, they may be limited if they can't put "graduated" on their application like other students in the area.
