hellen Posted September 9, 2016 Share Posted September 9, 2016 (edited) It's been a long time but I think I brewed the mint leaves in the milk. The flavor was nice and not at all like store bought mint ice cream. It was fresher and mellower but brighter at the same time. I just read the serious eats link from above. I thought the taste description of fresh mint was perfect. You need to try it at least once. It's been over years since I've made it but the memory of that flavor lingers. LinRTX Posted September 9, 2016 Share Posted September 9, 2016 Yes, we make mint ice cream with fresh mint. It is fabulous. Bruise the mint leaves, then heat them in the milk. Let cool and stain out the mint. I'm not certain how much milk we used, but I do know we doubled the recipe and needed two cups of mint leave. It is so ery good.
