That is a lot of cocoa powder! He also cooks them in a slow oven (300) for 45 min. One of the things that I've found out about brownies is that the cooking time matters if you want them to be moist. If a recipe says to cook them at standard temp, I usually shorten the time a little otherwise they tend to be dryer and crunchy on the edges. It's a blend of regular and dutch; can't vouch for other cocoas used, but it's quite nice with Saco brand. Sorry to be brand specific.
