Night Elf
The only way I know to eat this is to spread it on french bread and top with a tomato. I love the taste. How else can I eat this as a snack?

teachermom2834
I bake it with some Italian spices and a little egg substitute. I've also baked it with a little bit of tomato sauce spread on top and parm cheese. Kind of like lasagna without the noodles. I've been known to mix some pepperoni or ground beef in too. It is a comfort food for me sometimes. It is warm and gooey and tastes kind of like pizza without the carbs :) More of meal than a snack that way, though. Annie
You could make my favorite lemon ricotta cookies: http://www.foodnetwork.com/recipes/giada-de-laurentiis/lemon-ricotta-cookies-with-lemon-glaze-recipe/index.html Granted you can't really taste the ricotta, but they're delicious. Make extra glaze, dip the cookies in the glaze instead of spooning on top. ;-)
