HappyGrace
Sorry for all the questions-we're trying to get used to some dietary changes and I'm trying to use things up out of the fridge at the same time! Anything in it is ok except sodium.
Um_2_4
I make curry rolls (saute ground beef, add curry spices and some frozen mixed veges or just peas, drain and fill and roll as usual). My friend makes chrese rolls. She uses a shredded italian mix, I think.
KungFuPanda
I once had an empanadas recipe that used egg roll wrappers. Just fill them with meat, cheese, and seasoning.
J-rap
We love Vietnamese fresh spring rolls. They're usually made with rice wrappers. I wonder if you can make them with egg wrappers? There are lots of different versions (chicken, shrimp, veggie, etc.). We prefer the veggie. Here's one recipe I came across: http://bakingmehungry.com/2012/02/12/vietnamese-fresh-vegetarian-spring-rolls-goi-cuon-chay/
AK_Mom4
Dessert! Yum! Tweak the ingredients any way you wish - this recipe is peach pie filling and raspberry jam, but it works great with apples (and carmel!) or any other fruit. http://allrecipes.com/Recipe/Quick-and-Easy-Peach-Pie-Egg-Rolls-with-Raspberry-Sauce/Detail.aspx?event8=1&prop24=SR_Title&e11=egg%20roll%20wrappers&e8=Quick%20Search&event10=1&e7=Search%20Results

Freckles
Buffalo chicken wraps. Fill the wrappers with chicken, cream cheese, and homemade buffalo sauce. I make mine using Tobasco or Cholula hot sauce heated with butter and brown sugar. Then fry or bake. Yum!
