Instead of mixing up good ingredients into something that is doubtful, I'd start over. Was the flour old or too much wheat/rye and not enough gluten? I've rescued a lot of doughs, including one bread that was so heavenly and I know we'll never have it again. :) :) :) One bad dough, I added a bunch of water, added several more cups of flour, threw in some yeast and waited until it rose.
