Any really good (and kid friendly) ideas? :001_smile: One of our favorite (and super easy) meals is to cook Dinty Moore beef stew (#10 can) mixed with red wine and eaten with French bread and butter. I try to do "easy" for camping because I don't want to spend that much time in the "kitchen" while we are there. We have made pizzas, sandwiches with just about every combination of things you can imagine including ham/pineapple turkey/roasted red pepper etc, and my favorite - apple pies made with the cinnamon swirl bread. Pegasus Posted June 6, 2008 Share Posted June 6, 2008 The all time camping favorite here is doughboys. Spear Lil' Smokie sausages, wrap in cresent roll dough, and toast over coals until brown. Makes a very easy, yummy, breakfast. You can also wrap the cresent roll dough around 1/2" dowels (pre-soaked in water so they don't scorch or catch fire!) to toast the dough. When you pull it off the stick, you put jelly or syrup or sorghum in the hole. Pegasus Oh, in case you were more interested in dinner ideas, we like grilled chicken breast, marinated in Italian dressing and served with roast corn. Soak the ears of corn in water for a couple hours and toss right on the grill in their husk. 1/4 turn every 5 minutes so 20 minutes in all. Yum! You chop up meat, potatoes, vegetables, maybe have a couple sauces available, and everybody decides what they want in their foil packet. Lizzie in Ma Posted June 6, 2008 Share Posted June 6, 2008 5 Can Soup double up, triple up, make as much as you need cans of chunk chicken (the new pouches are easier to pack in and out) cans of diced tomatoes cans of black beans (you could use dry ones and get them ready overnight) cans of chicken broth cans of corn throw it all in a pot and heat it through put crushed tortilla chips in the bottom of each bowl add shredded cheddar to the top YUM! We take left over meat from the night before and mix it with fried potatoes and scrambled eggs...add red/green/orange peppers and onions. Yum. Edited to add that we just do the breakfast mix ina skillet...not the pouches. We do that too like Melinda mentions above...usually for dinner too. You just scramble a bunch of eggs and then each person puts the uncooked egg goo in a ziploc bag along with what seasonings and add-ins they want (cheese, onion,mushroom,ham,whatever), zip the bag and drop in boiling water. When the eggs cook through, take the bag out of the water. Eat the omelette right from the bag!
