Fun Weekend Desserts

My family loves boston cream pie. A layer of yellow cake, split with vanilla pudding in the center, and chocolate ganache on top. It's easy to make and doesn't take forever to eat the whole thing. I usually use a cake mix and make 2 8" layers. Freeze one for later, and make one into the pie. Then the next time I don't even have to bake the cake.

I make my own vanilla custard but Jello instant or cooked pudding works just fine.

We like to steam bananas (~ 5 minutes, in the peel). Toppings vary - can be coconut sauce (can coconut milk with a tsp or so of cinnamon and a tbsp or so of sugar, mixed together and simmered 2-3 minutes), or it can be a few squirts of honey, or chocolate drizzle (melt chocolate bar/chips, we always keep some in the fridge). Sometimes we do an ice-creamless sundae with steamed bananas, chopped nuts, melted frozen berries (warmed for a few minutes on the stovetop and spooned onto bananas -liquid, too), and then topped with coconut-cinnamon milk. You could add whipped cream, too.

 

S'mores are always a hit here, too. Graham crackers, bite-sized chocolate bars, mini-marshmallows - we put them in the toaster oven, or in the fireplace if it's cold. I imagine one could microwave these, too.

 

Chocolate fondue. We have a teeny, tiny 2-person fondue pot and we'll warm up some chocolate then dip fruit, breads, anything leftover from the past few days/meals. This is a big hit when we're playing board games.

 

I bet you could make, pre-slice, and freeze things like dulce de leche cake, tiramisu, ice-cream cakes and things like that. Take out a few slices here and there over the course of a few months ... I do this with fruit crumbles, especially when mangoes are in season :D During persimmon season I make and freeze loaves and muffins. They taste delicious when re-warmed!

 

Parfaits are quick and easy. A thing of yogurt, a handful of nuts or granola, and a few spoonfuls of berries (frozen during off-season, fresh during season). I sub tofu for yogurt, then we add a few drops of flavored stevia (vanilla, english toffee, hazelnut) - delicious.

 

Grilled fruit kabobs are good during summer, and can be made indoors year-round: maybe pineapple, peaches, plums, pears. Drizzle with honey, or dip into yogurt?

 

Ice-cream cookie sandwiches aren't hard. Buy or make large chocolate cookies ... use these as your sandwich "bread" and put a scoop of ice cream between them.

 

Great. Now I have a hankering for dessert. And I was going to be so good tonight, too, sigh!

layer graham crackers (whole crackers) on the bottom of a 9x13, top with vanilla pudding, graham crackers on top, more vanilla pudding, another layer of graham crackers, heat up some chocolate icing and pour it over the crackers. Let cool ~ it's like a bostom cream pie. We *love* this!

Okay, you don't actually have to "make" this, but my kids think it is the greatest dessert ever.

 

We cut up an ice cream sandwich into about 5 pieces. Provide each child/person with small bowls of caramel, chocolate syrup, sprinkles (and whatever else would go well on ice cream....maybe strawberry syrup?) and they dip each piece of ice cream sandwich into the chocolate then into the sprinkles. Or they dip into the caramel and then into the sprinkles.

 

They seriously think this is the best treat in the world.

Wanted to add one more. I'm not exactly sure what these are called, but I make them sometimes.

 

It's two ritz crackers with peanut butter in the middle and you dip the whole thing into melted chocolate and let it harden. Crackers and chocolate sound nasty together, but it's like a little piece of heaven. :D

 

Very easy to make. Buy a box of Ritz crackers, a container of peanut butter, and some Almond Bark (it doesn't have almonds in it...it's just the name of the chocolate).

 

Make Ritz sandwiches with a generous amount of peanut butter between each cracker. Sit them on wax paper.

 

Cut up the almond bark into smaller pieces. Put it all into a bowl and melt it in the microwave. Stop it and stir occasionally.

 

Dip each sandwich into the melted almond butter and sit on the wax paper to dry (it only takes a few minutes).

 

Eat and enjoy!
