I want to save time and have an unhurried afternoon. Please share your own easy crock pot recipes that you and your children both like. TanuvasaMama Posted November 1, 2010 Share Posted November 1, 2010 1-2 chicken breast 1 can black beans drained 1 can corn drained (although I prefer frozen) 1 1/2 salsa ( i just use the whole jar) put in crock pot, cook low 3 hrs take out chicken, shred it, put it back in and mix with all other ingredients. serve on tortillas with cheese and sour cream! YUM!!! I love this recipe because it's easy to make stretch just by adding more corn, beans or salsa. believe it or not, this feeds my family of 8! I put a pork shoulder roast (actually 2 - there was a lot of people) in the crock pot with bbq sauce and some water (shook it up in the empty bbq bottle) and let it cook all day. It was really good - it was tender and had a good flavor without being too BBQ-y for my kids (and those of uswho wanted to could add more BBQ sauce. dcjlkplus3 Posted November 1, 2010 Share Posted November 1, 2010 We also did boneless, skinless chicken breasts the other night with a can of condensed cream of mushroom soup - I did season this with season salt, garlic, salt and pepper - we served this over rice, 2 ot of 3 kids ate it well - that usually a success in my book. happykate Posted November 1, 2010 Share Posted November 1, 2010 Our 2 favorite chicken recipes for the crockpot are: 3-4 chicken breasts 1 pkg. taco seasoning 1 jar salsa just a bit of water Cook on low all day, or high 4-6 hours. Yummy served with rice and a salad! This is actually a weight watchers recipe I think, but we love it all the time! :) 4-6 chicken breasts 1 can cream of mushroom 1 jar sliced mushrooms 1 pkg. dried Italian dressing mix 8 oz. cream cheese (can use light) 1 c. white wine Cook on low all day, or high 4-6 hours. This is really, really delicious and although it doesn't look very pretty it makes a really tasty dinner even for company. Crock-pot Tortilla Soup 1 onion, chopped 2 clove garlic, minced 8 t cilantro 4 T butter, optional 40 oz broth 16 oz tomato sauce 1 pkg taco seasoning mix 2 can diced green chilies 1 T Worcestershire sauce 4 chicken breasts, can be frozen 2 can stewed tomatoes Handful or tortilla chips or 2 corn tortillas, torn into pieces Put all ingredients and cook on low for 6-8 hours. So if you make a mean meatloaf, but it into the crock pot about 6 hours. If you chicken breast casserole goes in the oven for 30 minutes, you can put it in the crock on low about 6-8 hours. Sandy in Indy Posted November 1, 2010 Share Posted November 1, 2010 (edited) Here's some of our favorites: Taco Soup 2 lb ground something (turkey or beef), cooked 2 lrg cans of black or kidney beans 1 lrg can of corn 1 can crushed tomatoes Onion, diced 2 pks taco seasoning 2 pks ranch dressing Throw all in the crockpot (don't drain the liquid from the cans) and cook for 4 hours on low. Serve topped with cheese, sour cream, or tortilla chips. Creamy Cooker Chicken 1 lrg crm of mushroom soup 2 c sour cream 2 pkgs of onion soup mix Mix well. Add 6 boneless, skinless chicken breasts. Cook on low for 8 hours. Serve over rice. Pepsi Pot Roast (I know you said no beef, but we LOVE this!) 3-4 pound roast Lrg cream of mushroom soup 1 env dry onion soup mix 16 oz of Pepsi Put roast in the crockpot. Top with soups and pour in Pepsi. Cook on High for 6 hours. Serve over rice. Mac and Cheese: 16 oz of dry macaroni, cooked 4 tbsp oil 2 cans evaporated milk 3 c of milk 2 tsp salt 6 cups of shredded cheese (I use 1/3 Velveeta and 2/3 cheddar) Onion, chopped fine (a little--4 tbs or so) Toss macaroni in oil. It is delicious as a main dish, shredded for fajitas or wraps, or deboned and chopped for casseroles, etc. 1 med. onion, sliced into rings 3 lb. frozen chicken pieces (any will do, skin or no skin, bones or no bones) 20+ cloves garlic, peeled Dried rosemary, thyme, or herb of choice salt & pepper to taste Spray crock with non-stick cooking spray or coat with a thin layer of butter or oil. Layer onion rings in bottom of crock. Layer chicken pieces over onions. Toss garlic cloves in over chicken. Sprinkle liberally with salt & pepper and dry herb. Cook on low 4 to 6 hours, until chicken is golden brown and falling away from bones. Sometimes I am lazy and just sprinkle dry onion flakes over the chicken instead of slicing an onion for the bottom of the crock. I've also subbed garlic salt for regular and it tastes great. I know this sounds garlicky, but it is really, really, really good! And it smells amazing while cooking. P.S. This isn't my recipe. I napped it off of a crock pot blog a while back. McCormick® Slow Cookers BBQ Pulled Pork Seasoning 1/2 cup ketchup 1/2 cup firmly packed brown sugar 1/3 cup cider vinegar PLACE pork in slow cooker. MIX Seasoning, ketchup, brown sugar, and vinegar until blended. Pour over pork. Cover. COOK 8 hours on LOW or 4 hours on HIGH. Remove pork from slow cooker. SHRED pork, using 2 forks.
