HollyDay Posted October 8, 2010 Share Posted October 8, 2010 Dh's favorite side dish with fish is Corn and Black bean salsa 16 oz corn - preferably fresh but frozen will do 3 cans black beans drained and rinsed 1 cup chopped fresh tomatoes - prefer romas 1/2 cup lime juice 1/4 cup onion (I prefer red) 3 T olive oil 1 tsp cumin 1/3 cup fresh cilantro. (I can never find this so I substitute dried cilantro or parsley) Toss everything but the tomatoes and chill. Just prior to serving, add tomatoes. A dollop of sour cream is nice too. Dh likes more corn than beans so I reduce the beans by 1 can. Or, I do 2 cans black, 1 can small kidney beans Sooooo good! Quote Link to comment Share on other sites More sharing options...

Punchie Posted October 8, 2010 Share Posted October 8, 2010 W/salmon, I usually slice brussels sprouts, sautee them w/olive oil, sprinkle w/salt, mix w/toasted pine nuts. HollyDay - we make a salad/salsa that's very similar to yours all the time in summer. I have to triple the recipe, and it still disappears in less than a day. I cut the sp in half, cooked in salted water for a bit, dried them off & brushed with olive oil, sprinkled with salt & pepper, and finished on the grill. The rest of the meal was curried garbanzo beans in a tomato base , and a green salad. It was very pretty & colorful.
