It says to heat oven to 425, sprinkle veggies with a drizzle of olive oil, salt and pepper and bake 20-25 minutes. slackermom Posted August 21, 2017 Share Posted August 21, 2017 If the pieces are small enough, yes, it will. At that temp, bite-sized pieces will be cooked through in 20-25 minutes. And I'm taking one carrot and cutting it into 3rds then quartering each of those. This is the first time I'm following this recipe. I don't want the timing off. Cinder Posted August 21, 2017 Share Posted August 21, 2017 We recently tried those small yellow potatoes that are about the size of a small bouncy ball. The directions say cut in half and bake at 425 for 10-15 mins. I didn't cut the smallest ones at all, the medium ones I cut in half and the large ones I cut into 3-4 pieces. Most were done in 15 but a few of the larger pieces needed about 3 more mins. But when I roast white/russets they seem to take at least 30-40 mins with pieces cut about the same size as the yellow potatoes. Quote Link to comment Share on other sites More sharing options...

Happy Posted August 21, 2017 Share Posted August 21, 2017 I can roast potato wedges (maybe an eighth of a potato?) and one inch chunks of carrots at 425 degrees for about 25-30 minutes and they are done. It might depend on your oven and your preferred taste. I probably like mine a bit on the al denta side. Toss in an onion, too. In fact, this might be supper tonight. Sounds so good. At those sizes, will 25 minutes be okay, or should I plan longer? Those little tiny cocktail potatoes in half normally take about half an hour sometimes 35 minutes in a hot oven for me. They do roast pretty quick but I'd allow a bit more than 25 minutes especially if you are putting anything else in the oven at the same time.
