catalinakel Posted January 28, 2009 Share Posted January 28, 2009 (edited) humbly submitted. juice from 1 lemon (or not, totally optional) 3 RIPE bananas(the deader the better-black is great!) 1/2 cup softened Butter (NOT margarine, please!) 1-3 T. honey cream all these together add: 1 and 1/2 cup whole wheat flour 1/2 cup oatmeal 1/2 teaspoon of each of the following: baking soda, baking powder, cinnamon ( ALSO A PINCH OF SALT, THAT i FORGOT TO MENTION INITIALLY) (today I made them, but had no baking powder, so I added two eggs instead) 1 cup (or less) chopped walnuts (or not) Mix by hand very gently and until all ingredients are just incorporated. I make in small muffin tins, sprayed with pam. You can make a loaf of bread, or regular sized muffins too. Bake at 375 till brown (15-20 minutes? I never set the timer) These never last more than two days. Adapted from a banana bread recipe from the cookbook Laurel's Kitchen. Yep. Old hippie chick am I. Today I made the recipe with two dead bananas and one apple that I diced and steamed becausse I was short one banana. worked great. have fun. Specifically, bananas. We have at least 4 blackened, in the freezer-waiting. The dc begged me to make banana bread today, and your receipe looks perfect-easy and healthy.
