StaceyinLA Posted March 22, 2017 Share Posted March 22, 2017 I'm about to do another Whole 30 (my last was a Whole 20 because I got so tired of meal prep and trying to be prepared when getting out on the roads). I need some easier meal and meal prep ideas. We are also going to the beach at the end of the Whole 30 (hence the need for Whole 30), and I'd like some paleo casseroles that would be easy to make ahead and bring to the beach, as well as ideas for easy lunches/dinners while at the condo. We're eating them today. lol http://myheartbeets.com/crispy-carnitas/ (I leave out the cinnamon and crisp it up in the oven rather than a cast iron skillet just because we make a ton.) Our favorite easy meal was avocado chicken salad in lettuce wraps. Just a mixture of ripe avocado, homemade Whole30 mayo, shredded chicken and some onion powder and pepper. You can jazz it up however you like. I grilled a lot of flank steak, too, with a simple marinade and sliced it up to eat on salads. I make chicken salad for lunch 3-4 days in a row, but I change up the herbs/slices/veggies so it's not the same thing. 6packofun Posted March 24, 2017 Share Posted March 24, 2017 We ate compliant lunchmeat with homemade ranch (made from homemade mayo watered down just a bit), lettuce and tomato inside scooped out cucumbers for "bread". I love her Ketchup! She has a newer cookbook for weeknight eating that might have some quick and easy stuff in it. mamaofgirls Posted March 24, 2017 Share Posted March 24, 2017 We are a meat and potato family - so most nights are just meat, potato (mashed, fried, baked, ect...) and a veggie :) I think that is the easiest meal ever and we love it here! I do still eat mostly paleo due to various food intolerances. I often make it with ground turkey) http://paleogrubs.com/turkey-burger-recipe (Amazing and flavorful turkey burgers. Super easy. I bake them in the oven. My 13 year old will eat 3 or 4 at dinner, if allowed!) My kids all rave for my greek salad made with this dressing http://www.primalpalate.com/paleo-recipe/greek-salad-dressing/ (I use a little less salt than their recipe, as I find paleo folks tend to over salt. One trick in making this salad is to cut up a red onion first and squeeze the juice of a lemon on it and let it marinate while you put together the rest of the salad. It makes a nice tart salad, but also mellows the onion perfectly) My kids refer to this as favorite salad. Everyone of them will eat it. I use shredded green lettuce, cut up a cucumber, tomatoes and red onion, then top with this dressing. If you find olives tasty, my children tell me they are delicious additions. I personally find olives vile and repulsive. Also, feta is a lovely addition for the nonW30 folks. Tacos, balsamic chicken, chicken lettuce wraps, breakfast, yankee pot roast, Khalua pork (the last two are from Nom Nom Paleo) are also faves. We LOVE Nom Nom's magic mushroom powder recipe (again, we use less salt, I think my husband quarters it). It smells special, but it adds an amazing flavor to pretty much everything it is put on. I'm just curious because we are doing a beach trip soon and I'm looking to bring a few frozen, prepared meals to just heat up in the evenings.
