Actually, you really aren't supposed to keep it in the fridge, that is a bad environment for cheese.

Wow- really? Is this for all hard cheeses? I've always kept them in the deli drawer and never thought twice about it. The things I learn here.

No. Unless you have a special cave to store cheese, it should be stored in the fridge, wrapped in paper rather than plastic, in the drawer. You can keep certain cheeses (like camembert, brie, epoisses...) out under a cheese dome, and you should pull cheese out a while before serving it so it comes to a good temperature, but cheese should be refrigerated if you plan to keep it.
