I will have two 8th graders next year.  Here is our list:

The Discovery of Deduction - logic

various read alouds that I add in randomly

Middle school competitive basketball league coached by dad

volunteer work - ds2 at the Humane Society, both boys at our church food outreach ministry twice a month with dad

Co op Latin class did not make for next year, and I cannot teach Latin so we will take a year off from foreign language study and resume with Spanish in high school.

I really need some sort of Bible program/study, but I have tried many and disliked them all.  I may just read a Psalm and a Proverbs a day.

Literature: Lightning Lit 8 (select) + a few other lit selections

Grammar: 4Practice (continuing from wherever we leave off, then next level)

Math: AoPS Intermediate Algebra + Pizzazz Algebra for review/extra practice

History: US History (Hakim Concise) + Mapwork

My son likes choice and will NOT read all these books.  He reads 12 classic novels and 4 short stories/novellas each year.  He is an advanced reader, so this list would not be appropriate for all kids.

7th grade

Victorian Era

Life of Fredrick Douglas

Importance of Being Earnest

Wuthering Heights

Dracula

Tales of Mystery and Terror

The Picture of Dorian Gray

Turn of the Screw Henry James

Great Expectations

Victorian Gothic Short Stories

Exploration

King Solomon's Mines

heart of Darkness (he did not like this and did not finish it)

Beyond the 100th Meridian

The Man Who Would Bey King

The River Ran East

Russia

We by Yevgeny Zamyatin

Cherry Orchard

The Collected Tales of Nicolai Gogol

WW1

I could not find any appropriate literature on this period so we skipped it.

Between the Wars
Great Gatsby

Growing up by Baker (about great depression)
Babbit by Sinclair Lewis
Metamorphosis

Cherry Orchard

Giants of the Earth

WW2
Endless Steppe (I do not like Diary of Anne Frank)
Catch 22
Slaughterhouse 5
Joy in the Morning by Wodehouse
The Eagle has Landed
Enigma by Harris

Asia
Rickshaw Boy
The Good Earth

Environmentalism
Silent Spring

Civil Rights
Why we Can't Wait
To Kill a Mocking Bird

Cold War
The Crucible
Tinker, Tailor, Soldier, Spy

Other Lit
Old Man and the Sea

This will be my second student doing 8th grade, but plans are still in the very early stages!

Math:  MUS Algebra (probably)

English:  Analytical Grammar, IEW SICC-B or WWS 2, some kind of vocabulary, Literature - Lightning Lit 8 or ?

Science: with our co-op, Earth Science for the Logic Stage possibly combined with BJU Earth & Space

Logic:  Art of Argument

Second Form Latin

History:  Ancients, using Notgrass Exploring World History, Biblioplan, or some conglomerated combination, which is where I always seem to end up!
