macmacmoo Posted January 17, 2014 Share Posted January 17, 2014 We have a bi-monthly meet up with another family. The kids play together, the hubbies get their geek on, and we sit back and socialize. It's awesome! The only problem is we need to bring a dish and they have many food issues. We bring lunch. They make dinner. We've made pasta the last few times, but it's getting old. dbmamaz Posted January 17, 2014 Share Posted January 17, 2014 You could do a snacky-meal . . . like veggie tray and deviled eggs and chips and hummus . . . or a shepherds pie? is that lunchable? you could also buy gluten-free burger buns (i find them in the frozen section) and make sandwhiches, pulled bbq or egg salad or something. potato salad and wings lol. Lunch: Soup safe bread and salad. veggies with protein dip or fish and salad. Sunflower butter sammy with safe chips and safe granola. There are lots of options Dinner salad meat potato and safe veggie and safe bread drink water allergies are a tricky thing depending on what it is. Mexican chicken in the crockpot (chicken breasts, some taco seasoning, salsa), corn tortillas are gluten free, tortilla chips, torn lettuce, chopped tomatoes, black beans, guacamole, cheese for those who can have it. Monica_in_Switzerland Posted January 17, 2014 Share Posted January 17, 2014 Loaded baked potatoes (butter, chives, bacon, cheese, sour cream...) with a salad gf wraps with lunch meat, cheese, veggies (use gf tortillas as wraps if you can't find gf wraps) Tostadas- black beans on fried corn tortillas with fixings Chili and gf corn bread Various hearty salads like quinoa salad, rice salad, potato salad, plus lunch meats and cheeses and veggie sticks chicken or tuna salad on gf crackers or bread For any recipe where you usually use breading (fish sticks, chicken nuggets) just sub crushed potato chips Hearty soup or stew Curried lentils with rice, red beans on rice, etc. Any Chinese dish prepared using rice or rice noodles and gf tamari instead of soy sauce Quote Link to comment Share on other sites More sharing options...

simplemom Posted January 18, 2014 Share Posted January 18, 2014 Liking all the above suggestions. 2 other suggestions are chicken haystacks (rice, chopped chicken with broth gravy topped with whatever toppings one chooses such as chopped celery, pineapple tidbits, slivered almonds, chopped bell pepper, shredded cheddar cheese for those that eat dairy, coconut flakes, and much more).
