Portable breakfast ideas?

Breakfast burritos. These can be as simple as scrambled eggs in a tortilla.

 

Yogurt and granola cups. We've made these ahead of time when we're going on early road trips. We put granola on the bottom of one of those paper coffee cups that has a lid, then some blueberries, and topped it with yogurt. Put the lid on it and pop it in the fridge until morning. (Ideally if you had some sort of reusable container to use that would be better, but those cups worked well in a pinch.)

 

Now that I'm hungry, I'd better go make breakfast!:001_smile:

but, I stocked up on single serve milk cartons (the Horizons brand) and string cheese for this very reason.

 

What I usually do is have them eat a quick piece of fruit while we're getting dressed. Then I take the milk, cheese, and a plastic bag of cheerios or some other similar dry cereal and they finish eating while we drive.

 

Mine are younger and I can clean up cheese and cheerios, but I don't want to have to clean smashed banana out of the carpets.

 

A friend does cereal bars, but my kids won't eat them.

This needs to be prepared in advance, or use leftovers.

 

I make our own egg roll ups this way:

 

Tortilla shells

Scrambled egg, egg substitute or combo of both

Sausage links or soy sausage links

Shredded cheese

 

Broil sausages. At same time, lightly heat up the tortilla shells. This works BEST on parchment paper. After cooled down, dice or slice and add to finsihed scrambled egges. Toss, and add cheese. Place into tortilla shell and "roll up". Put back in oven for about 5 minutes.

 

Roll entire "roll" in paper towel or more parchment paper and again in paper towel or what not to keep from getting burned. Grab a fruit and water and GOOOOOOOOOO.........
