OrganicAnn
We had a family dinner and have a cooked pork tenderloin left. I am totally drawing a blank on what I could do with (other than just serve it as is). BBQ pork sandwiches are the only thought I have. Anyone have any brilliant ideas to transform it into something for dinner.
KatieJ
add it to stir fried rice. I searched all recipes recently when I had a dry pork roast, and found a black bean/pork chili. It was delicious.

Mama_Rana
How much is left? How about these croquettes? http://allrecipes.com/recipe/leftover-chicken-croquettes/detail.aspx?src=ShareOnFacebook&recipeID=17868 They're meant for chicken, but I made them with turkey last night and they were delish. I bet pork could be good too!
Momof3littles
If I had enough for a main dish I'd make a mustard cream sauce and reheat with that over it. If I only had a little bit left I'd add it to a stir fry.
Cricket
I'm pondering the same thing for supper tonight! I'm thinking of mixing it with rice and some enchilada sauce and top it with cheese. I'm not sure yet.
4ofus
OH MAN! Cuban Sandwiches!!!! Sliced pork tenderloin, mustard, pickles, swiss cheese, cuban bread (ciabatta if I can't find cuban), add a slice of ham if you have it, skip it otherwise. In the oven just long enough to melt the cheese & delicious! My family LOVES these & we only make them when company is coming~such a treat!
