Prairie~Phlox
If you never use heals and just throw them out, one thing I do is just set them aside on an empty lid overnight and they are usually dry the next day. I save them in a container and when I have a bunch, I grind them up for bread crumbs.
Sun
I do the same thing, but I store them in a bag in the freezer. It comes in really handy!
missmoe
They also make good croutons.
dirty ethel rackham
I grind mine up in a mini food processor before they are dry. Then I just spread them out on a cookie sheet and let them dry. I find that if I wait for it to dry out first, I can't get rid of the big chunks.

Desert Rat
I throw mine in the freezer. When I get a good amount I dry them out, throw them in the food processor, and add italian seasonings for bread crumbs. Mmmm!
eaglei
Bread pudding is what I generally make (although I do like the heels, especially on homemade bread) . . .
