Caramel sauce with booze?

I need to make a caramel sauce with some kind of alcohol added. It's being used along with french vanilla ice cream to dress up apple strudel leftovers and transform them into an after-dinner-worthy dessert.

 

What kind of alcohol would you guess to be tasty when added to yummy homemade caramel sauce:

Brandy

Rum

Bourbon

Vodka

Amaretto

Frangelico

Or anything else?

I just made some of this!

 

Heat 2 quarts of goat milk with 2 cups of sugar.

 

Add a pinch of baking soda when it gets close to boiling.

 

Remove from heat until foaming subsides.

 

Cook until thick and dark.

 

Blend in blender with Jack Daniel's to taste.

 

Store in glass jars in fridge.

 

It is outstanding on ice cream and also in coffee.
