JudoMom
I was planning on making hamburgers tonight, but they don't sound that great. I don't want to make tacos or spaghetti, either. We had sloppy joes last night. I'm making chili for dinner for our small group on Sunday. I've got one who throws up mashed potatoes, so no recipes that include those. Ideas? Ria
Shepherd's pie, but put mashed carrots on part of it instead of mashed potatoes? Ria
lynn
What my kids like. Hamburger cooked with onion, seasoned with curry and maybe some worcestshire(sp?), served over rice serve dwith a salad or carrots and ranch dressing. Then I make extra rice to make rice pudding for dessert.
runamuk
How about meatloaf or salisbury steaks? My sister's son won't eat mashed potatoes, so she uses tater tots on the top of her shepard's pie. Would a cauliflower puree have the same effect as mashed potatoes? TraceyS/FL
Meatloaf? Porcupines? http://allrecipes.com/Search/Recipes.aspx?WithTerm=porcupines I use a mix of the recipes here - my mom makes them and so i try to do it kinda like that. I add rice to the bottom of the pan with the tomato sauce so there is extra rice. I have ot increase the sauce and water when i do.... These are things the kids have ASKED for this week but i'm out of hamburger! LOL!!

JudoMom
Would anyone like to share a great meatloaf recipe? I've also got canned biscuits and a bag of frozen french fries if anyone has a Shepherd's Pie type of recipe that would taste alright with one of those substitued for mashed potatoes. Jen in PA
Sometimes I cook ground beef with diced onion, drain everything when it's cooked through, and stir in cooked peas and sour cream. I season it with paprika. I serve it over rice, boiled potatoes, egg noodles, or pierogies.
KarenNC
Probably too late to help, but we like something we call "hamburger stirfry". Cook diced onion, ground beef and frozen peas with soy sauce (drain the beef and onion if there's a lot of grease, then add the peas), maybe some garlic, and serve over rice. It's something a friend made up years ago and we have enjoyed many times. I prefer to use low sodium soy sauce.
always cookin'
I found a recipe online googling for Olive Garden's pasta e fagioli. It is delicious. It calls for 2lbs. ground beef. It is my dh's favorite.

KathyBC
1.5 lb ground beef 1/2 c. milk (or substitute water) 1/2 c. dry bread crumbs 1 egg 1/4 c. chopped onion 1 clove chopped garlic (optional) 1 Tbsp. Worcerstershire sauce 1/2 tsp. salt 1/2 tsp. dry mustard 1/4 tsp. pepper 1/4 tsp. sage Mix all ingredients and bake in loaf pan at 350 for approx. 1.5 hrs. Sometimes we like a little sauce spooned on top before baking: 4 Tbsp. ketchup 3 tsp. brown sugar 1 tsp. mustard 1/4 tsp. nutmeg Yes, all processed, but yummy! :001_smile:
