Oh my goodness! I just found this recipe. I never got around to making it, but it was quite the popular dish on the old boards for awhile. I thought I'd resurrect it to see if a whole new breed of wtmers would like to give it a try! :001_smile:

Honey Baked Lentils

 

Serves 8

350 degrees for 1 hour

 

Combine in a Dutch oven or saucepan:

1 lb lentils (2 1/3 C)

1 bay leaf

5 c water

2 tsp salt

 

Boil, covered, for 30 minutes. Do not drain. Discard bay leaf.

 

Preheat oven to 350. Combine and then mix into lentils:

1 tsp dry mustard

1/4 tsp powdered ginger

1 Tb soy sauce

1/2 c chopped onions (substitute 2 cloves garlic for picky eaters)

1 c water

 

Cut in 1 inch pieces:

4 slices bacon

 

Stir most of the bacon into the lentils. Pour the whole shebang into a lightly greased casserole dish. Sprinkle remaining bacon on top.

 

Pour over all:

1/3 c honey

 

Cover with lid. Bake 1 hour. Remove lid last 10 minutes to brown bacon. Serve it over rice and pass the soy sauce.

 

You can put it in the crockpot for 3-4 hours on low instead of putting it into the casserole dish if you're so inclined. You can also substitute 1/2 pound of cooked ground beef or sausage for the bacon or serve it vegetarian.

Oh, I luuurve honey baked lentils, but lentils...well, they don't like me much. I make them anyway though!

 

My recipe is slightly different, and I love adding in chunks of sweet potato and butternut squash. Hmmm...I might have to make that tomorrow now that the weather's turned.
