Flax seeds: I bought some, so now what?

I bought a little coffee grinder just for my flax seed. Works great.

 

Someone on here shared a to-die-for pumpkin muffin that had flaxseed a couple years ago. Here's something to start with! :)

 

1 c flour

3/4 c ww flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

1/4 tsp nutmeg

3/4 c flax meal

 

2 eggs, slightly beaten

1 c pumpkin

1/4 c oil

1/2 c honey

1/3 c water

 

1/2 c chopped walnuts

1 c mini chocolate chips or cranberries, chopped apples or ?

 

Combine dry ingredients. Combine wet ingredients, then stir into dry ingredients til just combined. Stir in nuts and chocolate chips (or other). Fill lined cups 3/4 or so full for 15 regular size muffins. I use the large Pampered Chef scoop close to level and get 2 dozen muffins. Bake at 350* for 20-25 minutes.

I rarely bake from 'scratch'.

 

Last time I tried to make cookies the result was tiny baseballs...:glare:

maybe too much flour? I haven't tried since then!

 

Anyway my question is, can I use the above recipe to make pumpkin bread or cake?
