Liz CA
I just made this: 2 14oz cans of coconut milk (full fat - not reduced or non-fat!) 1/4 cup of coconut crystals like these: http://www.amazon.com/Coconut-Secret-Crystals-Raw-12-Ounce/dp/B003XBBAUM/ref=sr_1_1?ie=UTF8&qid=1342308938&sr=8-1&keywords=coconut+crystals+raw 2/3 cup cocoa powder (unsweetened) 1 t vanilla a little sea salt Combine and process in ice cream maker, freeze for a couple of hours and ENJOY. You can probably try different flavors. You can also make your own coconut milk if ambitious: http://www.5min.com/Video/Thai-Foodcast-Coconut-Milk-83286563 Edited July 14, 2012 by Liz CA

PIE!
There's really no sugar or sweetener of any kind in this? Is it on the bitter side?
justamouse
Wow, there's no sugar?! Awesome!

*Inna*
Interesting! I found similar recipe with sweetener. http://www.thenourishinggourmet.com/2008/11/chocolate-coconut-milk-ice-cream-with-coconut-sugar.html
Liz CA
There's really no sugar or sweetener of any kind in this? Is it on the bitter side? No, not at all. It is sweet. I did use 1/4 cup of coconut crystals like this: http://www.amazon.com/Coconut-Secret-Crystals-Raw-12-Ounce/dp/B003XBBAUM/ref=sr_1_1?ie=UTF8&qid=1342308938&sr=8-1&keywords=coconut+crystals+raw Did I forget this in the original recipe...I better check. I tried to insert links and may have accidentally deleted this step.
Liz CA
no sugar, no eggs? Cool SORRY, folks. I just corrected the recipe - I had forgotten the 1/4 cup of coconut crystals. But no cane sugar or eggs or cream. The coconut milk is rather sweet by itself.
Liz CA
Interesting! I found similar recipe with sweetener. http://www.thenourishinggourmet.com/2008/11/chocolate-coconut-milk-ice-cream-with-coconut-sugar.html Which is exactly where I got it. I get Kim's daily blog emailed. :D I did reduce the coconut crystals to 1/4 and it still tastes sweet enough to me. But everyone should experiment while you are mixing it up before processing in the ice cream maker.
Liz CA
Yum! Does the cocoa powder mix in to the coconut milk easily? Yes, I just used a fork but you could use a food processor or mixer.
