We have a shrimp/mushroom one that looks very tasty but now need one for people who might not like shrimp and/or mushrooms. Any ideas? TheReader Posted January 25, 2012 Share Posted January 25, 2012 spinach is definitely a good crepe filler. sun dried tomato and can they have cheese? confused if you mean just no meat (b/c of Lenten) or if you mean truly vegan (no dairy, no egg, etc.) If they can have cheese, sun dried tomato w/mozzarella is fantastic in a crepe. You could do mushroom with stuff besides shrimp....spinach mushroom would be good together, for ex. you could adapt various pizza toppings to be inside a crepe (like a calzone but thinner) - marguerita pizza, which is basil & fresh tomato (I think?) would be good. Or here there's a broccoli/garlic pizza -- that would be decent in a crepe, maybe, if you chop the broccoli tiny instead of big chunks.
