Anyone have a yummy pasta salad recipe?

I like greek style pasta salads - feta cheese, red onions, black olives, cucumbers, spinach, pasta and for dressing oil, vinegar and garlic.

 

But you can google a million different kinds of pasta salad or just make one using ingredients you have.

 

:iagree: The best EVOO you can afford, and ditto on the red wine vinegar. I also like plenty of flat-leaf parsley and diced toms tossed in. I like De Cecco's tri-colored spirals for this.

I like the tri-colored noodles with fresh veggies (any combination of tomatoes, cucumbers, zucchini, bell pepper, red onion, carrots--really any kind of vegetable). I just use balsamic vinegarette salad dressing. Fresh herbs (basil, parsley) are a plus but it's fantastic without them too!:001_smile:

Dressing:

Fresh Limes x 2

1 C Mayonnaise

Pineapple Juice (to taste)

Italian Seasonings (to taste)

 

 

Remaining Ingredients:

Cooked Chicken (chopped)

Cooked Bacon (chopped)

Pecans (chopped)

Grapes

Craisins

Apples (chopped)

Green Onions (chopped)

Cheddar Cheese (small squares)

Corkscrew Pasta (cooked and drained)

 

 

Throw it all together! Chill overnight and add more dressing.

Yum, we are definitely going to try this. I am one of those by-the-recipe cooks, though, so could you tell what amounts you use, or at least a ratio?
