Ottakee Posted April 17, 2010 Share Posted April 17, 2010 We had this tonight: Hamburger stew 1lb. ground beef browned with onion (or use left over beef roast like I did tonight) 1 can corn 1 can green beans 1 can carrots 1 can cr. of mushroom soup 1 packet onion soup mix Drain the veggies and mix all together in a casserole dish. Top with mashed potatoes (instant or left over ones) or even tator tots. Bake at 350 for 30-40 minutes until bubbl. You can top this with cheese if you want. Baked Chicken and Rice · 1 can cream of chicken soup · 1 can cream of mushroom soup · 1 can cream of celery soup · 1 cup uncooked white rice (not instant) · Butter or margarine · 3 to 4 chicken breasts · 2 to 4 cups shredded Italian cheese Combine soups and rice in an 8 x 10 baking dish. Anne Posted April 17, 2010 Share Posted April 17, 2010 (edited) My personal favorite: saute chopped onions with curry powder. Add cubed sweet potatos and 1/2 (approx.) cup water. Cover & simmer until potatos are almost done (10 min?). Add 1 cup black beans, rinsed & drained, and a big handful of spinach if available. Heat through. Yum! Family favorite: Tuscan Pasta Saute minced garlic, chopped onions & chopped carrots until tender. Stir in 1 jar of pasta sauce and crushed red pepper to taste. Cover & simmer 5 minutes. Add 1 can white beans, rinsed & drained. (sometimes I add spinach) Heat through. Meanwhile, cook @ 2 cups pasta (I use penne) until done. Combine. Very good, very easy & very fast. We are still limited to using the slow cooker and microwave (woke up Wednesday morning to see that toaster oven was destroyed in what appeared to be a drive -by incident - don't ask :glare:) PULLED CHICKEN: Bottle of barbecue sauce into slow cooker Couple of cans of Classic Coke or Coke Zero Stir Add (not frozen) chicken leg quarters or legs and thighs Cook on High for 4 hours or Low for 8-10 hours Option: Pop on grill on a throw away foil pan to just give it some crisp Ravioli and meatballs: slow cooker again 12-14 ounces frozen ravioli (large ones, not minis) Large jar of Ragu or whatever sauce you like Perdue Turkey Meatballs Pour half jar of sauce in bottom of slow cooker Place frozen ravioli over sauce Pour a little more sauce over ravioli and spread Place meatballs over that Pour rest of sauce Cook on Low for about 4 hours -- this cooks quickly. Sprinkle some dried onion flakes in the bottom of a 11 x 7 glass baking dish. Pat about 1 lb. of ground beef into the pan. Sprinkle beef with seasoning of choice (we use salt-free seasoning.) Bake at 425 F. until desired doneness. It takes less than 15 min. until they are cooked thru for me. If desired, remove and cover with cheese slices and return briefly to oven until cheese is melted. Guest Virginia Dawn Posted April 17, 2010 Share Posted April 17, 2010 My kids love This chicketti: Two large chicken breasts boiled and chopped 1/4 cup minced onion 2-3 cloves garlic minced 1 16 oz can tomato sauce 1 16 oz can diced tomatoes 2 tsp. cumin 2 tsp chili powder 1 pickled jalapeno seeded and chopped (optional) 1/4-1/3 cup sliced green olives (depending on how much you like olives) 4 oz. grated cheddar cheese Cook an 8 oz package of spaghetti in boiling water til aldente. In a large pot, Saute the onion and and garlic in a little oil add the rest of the ingredients and simmer about 15 minutes. Add as much of the drained spaghetti as you want and stir well . We like it saucy so I don't always use up all the spaghetti, I just refrigerate the leftovers. Spread in a 9by 13 glass baking dish. Boil the gnocchi (I find shelf-stable packages near the pasta at the grocery store) according to the pkg directions. Cook some crumbled Italian sausage in a frying pan (and drain excess oil). Add the cooked gnocchi, a little of the water you boiled it in, some coarsely grated parmesan cheese, and a few large handfuls of fresh baby spinach. Cook until spinach is slightly wilted.
