I haven't had spinach salad in years, but I remember eating delicious salad with eggs, mushrooms, and a creamy sweet dressing. There's way to many recipes online with too many varieties. I just mix sliced strawberries, chopped nuts, fresh spinach. and raspberry vinagreitte, but you could add whatever you want to this. But here's what we put in our salad and the kids LOVE it! strawberries, cranberries, diced fresh peach - toasted sliced almonds and sunflower seeds. yummy yummy! Sharpie Posted November 1, 2009 Share Posted November 1, 2009 Here's our favorite spinach salad & dressing recipe. 2 bags spinach 1 cup mushrooms, sliced 2 eggs, hard-cooked & chopped 3 cups shredded Swiss cheese 6 slices cooked bacon, crumbled (I use bacon bits) Combine all in a large bowl & mix with dressing. Mix in blender (dressing): 1 onion 2/3 cup sugar 1/2 tsp pepper 1/2 tsp celery seed 1/2 tsp salt 1 Tbsp mustard 1/3 cup vinegar 1 cup oil I never put all the dressing on the salad. I have a friend who incorporates spinach into meatballs and her kids like those. Spinach Salad Dressing ½ cup olive oil ¼ cup cider vinegar ¼ cup sugar ½ teaspoon salt ½ teaspoon paprika ¼ teaspoon dry mustard 1/8 teaspoon pepper onion to taste (recipe calls for ½ medium onion—I use two tablespoons) Finely chop onion and mix with other ingredients 12 hours in advance. Salad Ingredients Spinach, washed & dried bacon, fried crisp & drained One 11-ounce can mandarin oranges mushrooms & avocado (optional) Just before serving, mix ingredients and toss with dressing. Chrystal Posted November 1, 2009 Share Posted November 1, 2009 I do super simple 1 bag of baby spinach washed 1 bunch of scallions chopped sliced mushroom (if you like them) chopped boiled egg (if you like them) 6 pieces of bacon sliced into pieces Vineagar, salt, a little sugar. Cook the bacon in a measuring cup in the microwave until done and crispy. Remove the bacon and chop, but save the drippings. Combine all the salad ingredients in a bowl. To the reserved bacon drippings add vinegar (twice as much vinegar as drippings) salt to taste (usually 1/2 tsp or so) and sugar to taste (usually 1 tsp or so). Stir everything up and then pop in the microwave for 30 seconds or so. Stir again making sure to get the bits on the side of the cup. Pour over the salad and toss. Add the bacon to the top and serve. Ferdie Posted November 1, 2009 Share Posted November 1, 2009 (edited) Not spinach salad, but since spinach is a top 25 power food here are my children's favorite spinach recipes: Sauteed Spinach - Saute garlic and 1 T sesame seeds in olive oil in a large pot. Add fresh spinach with a few splashes of water. Cover and cook over high heat for 5 min., stirring once or twice. Add 1/8 tsp. cayanne pepper. (Note> The spinach will greatly reduce in size. I do two bags of baby spinach for a family of 5. Also if you use regular spinach leaves and have young kids, cut up the sauteed spinach before you serve so they don't choke. You don't need to do that with the baby spinach). Smoothies - I swear you will not taste the spinach in these smoothies. Put 1/2 cup milk and 1/2 cup water in blender. Add 2 cups fresh spinach and blend. Add frozen fruit, (my kids love strawberries and banana). Serves 2 or 3. (I also add a scoop of protein powder and 1 T ground flax seeds too). Washed, fresh baby spinach Chopped Walnuts Your favorite apple, diced into bite size pieces Top with Raspberry Vinaigrette. I reduce the sugar in this recipe drastically. RASPBERRY VINAIGRETTE DRESSING 1/2 c. raspberry vinegar 1/4 tsp. salt 1/4 tsp. pepper, fresh ground 4 tsp. sugar 2 garlic cloves, finely chopped 2 tsp. Worcestershire sauce 1 tbsp. BridgeTea Posted November 1, 2009 Share Posted November 1, 2009 We eat this about 4X a week: Fresh baby spinach Orange sections or canned mandarin oranges Sliced strawberries (fresh or frozen) Raspberries (fresh or frozen) Use whatever spinach:fruit ratio you want. We use enough fruit that we usually skip any dressing. However, one day I played around and mixed orange marmalade and balsamic vinegar to toss with this salad, and it was a big hit. I'd do it again.
