I want to make squash soup tomorrow

The recipe is from Cooking Light and they suggest topping the soup with turkey croquettes. It is really good! Sometimes I just make the croquettes because my children love them.

Croquettes:

2 cups leftover turkey- (I use ground)

1 3/4 panko breadcrumbs (I have used regular breadcrumbs also)

2 Tbls milk

1 1/2 tsp chopped fresh sage

1/2 teaspoom salt

dash of pepper

1 large egg beaten

2 1/2 Tbls oil

3/4 cup sauteed onion, carrots, celery and garlic mixture from the soup recipe

Mix everything, except the bread crumbs together and refrigerate until firm. Make 12 1 inch thick patties and press the breadcrumbs onto the patties.

Heat oil over medium heat and and add the patties cooking them about 3 minutes on each side. Remove from pan and keep warm. Serve on top of the soup.
