It had canadian bacon in it but when I pureed the soup you could not even tell it was in there. So your chicken may work the same way. emerson612 Posted October 20, 2009 Share Posted October 20, 2009 The recipe is from Cooking Light and they suggest topping the soup with turkey croquettes. It is really good! Sometimes I just make the croquettes because my children love them. Croquettes: 2 cups leftover turkey- (I use ground) 1 3/4 panko breadcrumbs (I have used regular breadcrumbs also) 2 Tbls milk 1 1/2 tsp chopped fresh sage 1/2 teaspoom salt dash of pepper 1 large egg beaten 2 1/2 Tbls oil 3/4 cup sauteed onion, carrots, celery and garlic mixture from the soup recipe Mix everything, except the bread crumbs together and refrigerate until firm. Make 12 1 inch thick patties and press the breadcrumbs onto the patties. Heat oil over medium heat and and add the patties cooking them about 3 minutes on each side. Remove from pan and keep warm.
