You can let them read what they want or tie it in with history, science, or writing. Some ideas are biographies, historical fiction, nature stories, stories of inventions, etc.
Sounds like she already knows something about writing. If she does IEW and 7 one page papers and 1 3 to 4 page paper it sounds like she'll be getting writing practice. You don't want her to be over crammed, to the point it isn't enjoyable.
I don't think it's worth staying with, when there is colorful and simpler options available. If there is a curriculum that appeals to her, that is what sounds good. Specially since there is other curriculum options available that goes through high school math.
I think Mathematical Reasoning from Critical Thinking, or Developmental Mathematics. Also doing short drills together with flash cards is great, when needed.
Writing and Rhetoric from Classical Academic Press is one option.
Another option, for a student that enjoys reading story books, is writing your own book, using Learn to Write the Novel Way form Konos.
It might also be rewarding to keep a journal or scrapbook on a hobby or activity of interest.
