Jaybee Posted November 22, 2020 Share Posted November 22, 2020 Should be 1:1. However, in a cornbread recipe, I would melt the butter before adding. I bake mine in an iron skillet, and with that method, I actually don't mix the butter into the batter. I heat the iron skillet in the oven until the butter melts, take out the skillet, sprinkle a little cornmeal into the skillet, then spoon in the batter (without mixing in the butter).
