Gourmet cupcake recipes, please

I make cupcakes monthly to celebrate birthdays for one of my kids' activities and would like to try my hand at making them a bit more gourmet, mostly because it just sounds fun and yummy to be a bit more creative. What inspired me was a recipe on the cake mix box jazzing up the regular recipe a bit, but I'm also up for cooking from scratch. Got a recipe you would share? Would love General baking tips, too. Thank you!

I typically doctor up a boxed cake mix by using butter instead of oil, adding two extra egg whites, adding vanilla or other flavoring, and by using milk instead of water.  I use additional flavoring in my buttercream frosting recipe.  IMO, quality ingredients (particularly the fats used!) are key.  I almost always use 4 eggs and a whole stick of butter in my cupcake recipes.  Another stick of butter goes into the frosting. :)

Our most popular ones are s'more cupcakes. We buy the giant marshmallows to make them extra special.  My method is to put a mixture of graham cracker crumbs and butter in the bottom.... then my favorite chocolate cake (which is the One Bowl chocolate cake recipe in the Red Plaid book or the mud puddle cake from Moosewood).  When they come out, ice them with a little chocolate frosting and pop the giant marshmallow or two normal ones on top.  Under the broiler until golden.
