Slache
I don't have a deep fryer. Thanks.
Jean in Newcastle
I oven bake mine. Cut them into strips. Drizzle with olive oil and salt. Put in a 450 degree oven for about 40 min. (I check around the 30 min. mark - some of it depends on how thin you cut them.)

Rachel
We were at a restaurant that served fantastic sweet potato fries. They were made with a rub of oregano, paprika, and cumin.
catz
Thanks. The "guaranteed" best recipe I used from a friend was at 350 degrees. They were not good. I do this oven bake thing. I do think you do want a bit warmer than 350 to get the crispy outside. But you do have to watch them. They should be browning on the outside. I personally like the crisp and would rather have them overdone than underdone.
Jean in Newcastle
Like OKBud said, it's best to turn them part way through the baking time. I forgot to add that step. Otherwise they tend to stay soft on the part that was against the pan.
Slache
This is interesting. I can make crayfish etoufee and zucchini cake, but this is all new to me. I'm getting hungry.

medawyn
I agree with the above, but stick your baking sheet in the oven while it's preheating. I have the best luck when the fries "sizzle" as I'm putting them on the pan. Sea salt is our house favorite seasoning, but I've shaken pretty much anything on them before baking and they are usually delicious. I also just love sweet potatoes :-)
