Purple cabbage

I got a huge head of the stuff in my CSA share this week. My parents never ate cabbage, so I never ate cabbage. Help me use this up! Any suggestions that use lots of cabbage are welcome: side dishes, main dishes, soups, whatever. The only limit is that recipes must be gluten free. Bonus points if they are dairy and/or corn-free too!

Sausage cabbage soup:

 

onion

carrots

celery

garlic

salt

pepper

thyme

sausage (I use Jones roll sausage)

cabbage (sliced in short strips)

water (just cover mixture for thick soup)

bay leaf

bring to boil and simmer until vegs are cooked

spinach (at end of cooking); I use frozen spinach

 

sometimes I add sm. can of diced tomatoes at end of cooking time

I made stew with purple cabbage once. It turned purple. Everything was purple. The stew was fine but no one could eat it because the colour made it so unappealing.

 

Don't use it in anything requiring cooking.:tongue_smilie:

You overcooked it! It's purple but a beautiful purple and most importantly it's delicious and nutritious. Add in the spinach and it's the most beautiful green AND purple.

You can use some to make dye with your kids.

 

Also, I really like what is known around here as "asian cabbage salad"

 

Chopped cabbage

broken up dry ramen noodle (without seasoning)

home made salad dressing (vinegar, oil, sugar, salt, pepper, maybe something I'm forgetting)

toasted almond slivers

Coleslaw

 

sometimes I make a peanut sauce (ginger, peanut butter, fish sauce, hot water, a little sweetener if you want it, etc.) and just put that over shredded raw cabbage. If you like cilantro that is good with peanut sauce...chop and mix into the salad.

 

Fry thinly sliced or shredded pieces and serve with bratwurst, hotdogs, or other sausage.

 

Fry shredded pieces and top with cooked ground beef, ground pork, or ground turkey, soy sauce, hot sauce, a little sesame oil if you want, etc. (google "crackslaw"). Extra yummy with grated fresh ginger added into the meat while cooking.
